Meal Prep Salads

I like to mix up my lunches each week so I prepared a Mandarin Orange Chicken Salad and a Chef's Salad. They use a similar base of ingredients to make it an easier meal prep, but the few changes in ingredients and dressing provide variety throughout the week.


The Mandarin Orange Chicken Salad is zero WW Freestyle Points (without dressing). I usually like this with Peanut dressing or Sesame Ginger dressing.


The Chef's Salad is 2 WW Freestyle Points (without dressing). You can use a light Ranch or creamy dressing for this.


You can find and purchase a set of 50 of these disposable salad containers on Amazon for about $18 (36 cents each). Waterchestnuts can typically be found in the International section of most grocery stores.


Recipes make four 32 oz. salads in total.

Total Cook/Prep time: 45 minutes


  • Ingredients needed for all 4 salads:
  • 1 head iceberg lettuce (roughly chopped)
  • 2 heads Romaine (trimmed and roughly chopped)
  • 16 oz (1 lb.) pre-cooked grilled chicken
  • 1 can (15 oz) mandarin oranges - no sugar added - in juice (drained)
  • 1 can sliced water chestnuts (drained)
  • 1 cup shelled soy beans
  • 3 scallions (sliced)
  • light sprinkle of sesame seeds (optional)
  • 2 hard-boiled eggs (sliced in half)
  • 4 slices center cut bacon (cooked crisp)
  • 1 cup cherry tomatoes (sliced in half)
  • 6 cucumber slices


Distribute a mix of the iceberg lettuce and romaine throughout the 4 containers

Distribute the chicken among the 4 containers

Prepare the 2 mandarin salads by distributing the mandarin oranges among 2 (of the four) containers

Distribute the soybeans, waterchestnuts, scallions and sesame seeds among the 2 mandarin containers

Distribute remaining ingredients (hard boiled eggs, bacon, tomatoes and cucumbers) among the 2 remaining containers

Seal the containers with a lid and store in the refrigerator up to 4 days.
