Shaved Steak Fajitas

You can find the shaved beef steak in the butcher section of most grocery stores. Trader Joe's carries it too. (See video for quick demonstration). 1 serving of this recipe, WW Freestyle Points and nutritional values for this include: 1 small flour tortilla (2 Points), 4 oz shaved beef steak (3 Points), 1/2 cup sauteed peppers & onions (zero Points), 1/4 cup salsa (zero Points). 

 

Keep in mind that I cook the shaved beef steak first (with just onion powder and salt) for 2 reasons. One is because the beef cooks faster than the peppers and onions, and two, if there is left-over beef, I can save it for sandwiches the next day and the seasoning is neutral.

Recipe makes about 4 - 5 Fajitas. 431 calories | 5 WW Freestyle Points.

Ingredients

  • 1 package shaved beef steak (about 1 lb.)
  • 4 - 5 small flour tortillas
  • 2 bell peppers (any color - sliced in thin strips)
  • 1 onion (sliced in strips)
  • 1 1/2 cups salsa (I used fresh pico here but use any kind you like)
  • 2 tbsp ground cumin
  • 2 tbsp chili powder
  • 1 tbsp onion powder
  • salt and pepper
  • spray of olive oil
  • fresh chopped cilantro (optional)

Directions

Heat a pan on the stovetop (medium heat).

Place the shaved beef in the pan (a little at a time. It cooks quickly).

Season the beef with just a sprinkle of onion powder and a little salt as it cooks.

Sautee for about 1 - 2 minutes or until the meat is brown.

Set aside.

Add the peppers and onions to the same pan (do not rinse the pan).

Spray the peppers and onions with olive oil and add the chili powder and ground cumin.

Sautee about 6 - 7 minutes or until the peppers and onions are slightly tender but still a little firm.

Set aside.

Warm the tortillas in the microwave for about 30 seconds.

Assemble the meat and peppers on a platter as well as the tortillas, salsa or other condiments you wish to use.
